I am going to miss Mrs. Beltran. She was always hospitable to me, especially around Christmas time: "Quieres un tamal?" or how about a cerveza or glass of wine?" she would ask. Always asked me how my parents were doing. I have known the Beltrans for over 40 years since our high school years and she always treated me like familia. Thank you for all of the great tamales, menudo, pieces of cake, burritos, beer, homemade margaritas, wine, chips and salsa around the dinner table, but most of all; the memories en su cocina. Thank you for everything Mrs. Beltran, may you dance with the Angels in heaven! Until we meet again querida Senora Beltran, que descanse en paz.
